Quick 'N Easy Peanut Noodle Salad

Serves 4

Non-spicy version

1 8 oz. package of angel hair pasta noodles
1/2 c. chunky peanut butter
1/4 c. soy sauce
1/2 tsp. red pepper flakes
2 green onions thinly sliced
1 carrot, shredded (or a handful of baby carrots)

Spicy version

1 8 oz. package of angel hair pasta noodles
1/2 c. chunky peanut butter
1 tbs. soy sauce
1/2 tsp. red pepper flakes
2 green onions thinly sliced
1 carrot, shredded (or a handful of baby carrots)
2 garlic cloves, minced
equal parts cayenne pepper and curry (depending on how spicy you want it)

Directions

1. Cook pasta until it is al dente, (firm to the touch).
2. While pasta is cooking, mix peanut butter, soy sauce, red pepper flakes, cayenne pepper, and curry. Mix it until it is smooth.
3. Drain pasta, reserving about 1/3 cup of the water. Mix this water in with the peanut butter mixture and mix well. Toss the sauce with the noodles and add in onions, carrots, and garlic making sure that it is well mixed.
